Del Taco Brings Back Fan-Favorite Carnitas Alongside Five New Creations for Summer

Del Taco is bringing back slow-cooked Pork Carnitas this summer, loading the fan-favorite protein into eight menu items across a new limited-time lineup. The nation's second-largest Mexican quick-service restaurant launched the promotion nationally on June 22, 2026, just two weeks before the country's 250th birthday on July 4. Globe Newswire reported the rollout includes five brand-new creations, returning seasonal beverages, and a patriotic dessert tied to America's Semiquincentennial.
The campaign's standout new item is the "Independence Poppers" — a beverage line featuring strawberry fruit-flavored popping boba pearls mixed with blue raspberry syrup. Funnel Cake Fries are also returning. Prices for the new items range from $2.00 to $7.00, keeping Del Taco in its value-friendly lane while pushing a premium protein. The limited-time offer runs through late August 2026.
Del Taco's carnitas are not pre-shredded or reheated from a bag. According to Nation's Restaurant News, the pork is braised for hours using a blend of authentic Mexican spices. That process sets it apart from many fast-food competitors. The protein anchors eight menu items, including the Carnitas Street Taco, Carnitas Loaded Fries, and the Carnitas Combo Burrito.
The slow-cook method does create real pressure in the kitchen. Adding eight items built around one protein requires careful inventory management, especially heading into the high-traffic July 4th weekend. Del Taco operates more than 600 locations nationwide, all of which are expected to carry the new lineup during the promotion window.
The Independence Poppers are built to be shared online. Food influencers on TikTok have praised the bright visual contrast between the red strawberry pearls and blue raspberry syrup, calling it "highly Instagrammable." Del Taco began teasing the drink on TikTok and Instagram starting June 15, using the hashtag #CarnitasIsBack and patriotic red, white, and blue imagery.
Industry analyst Mark Kalinowski of Kalinowski Equity Research says the beverage is a deliberate upsell play. "The goal here isn't just to sell a burrito; it's to get the $5.00 beverage and the $4.00 dessert added to every ticket," Kalinowski said in a June 20 briefing. Del Taco's own internal projections estimate a 4.2% lift in beverage-only transactions from the Independence Poppers alone.
Pork has stayed more price-stable than beef in early 2026. That gives Del Taco room to pitch carnitas as a "premium" protein without raising prices significantly. The company sees the move as a defensive play. Both Taco Bell and Chipotle have launched their own summer 2026 promotions tied to the Semiquincentennial, and Del Taco needs to hold its ground as the number-two Mexican QSR chain in the country.
CMO Noah Chillingworth framed the campaign as both a quality statement and a seasonal celebration. "We are continuing to innovate around a guest favorite while bringing back seasonal treats and nostalgic flavors," Chillingworth said in the official press release. The company projects a 3–5% increase in same-store sales for the third quarter based on the summer lineup's performance.
Not everyone is celebrating. The Center for Science in the Public Interest has raised concerns about the high sugar content in the Independence Poppers and Funnel Cake Fries. The group argues that patriotic branding is being used to distract from the nutritional profile of what it calls "ultra-processed sugar bombs." Del Taco has not responded publicly to those criticisms.
There are also cultural questions about the carnitas product itself. Hispanic media outlets have noted that while Del Taco highlights "authentic spices," its mass-market version of carnitas differs from what you'd find at a traditional Mexican butcher shop. The company's marketing leans heavily on authenticity — but the debate over what that word means in a fast-food context is ongoing.
